The idea of “Market Cuisine” stems from the French Canadian term “Cuisine du Marché,” which means cooking with fresh ingredients. At MARKET, our fresh ingredient philosophy starts in our kitchen, where we bake our own breads daily, cure our own meats, do our own butchering, make our own cheese and grow our own herbs, micro greens and select vegetables. MARKET is the first restaurant in Calgary to use an internal home garden, the Urban Cultivator, where we can grow more than 16 different varieties of heirloom seeds year round. We change our menu regularly so we can cook in harmony with the changing seasons and ensure the freshest and best tasting ingredients possible.
At MARKET we believe everyone deserves to experience amazing food without compromising taste! If you have an allergy or dietary restriction please let us know. MARKET can accommodate most food allergies and has its own gluten free fryer to further reduce cross contamination for celiacs and gluten sensitive diners. Our Team:
MARKET is a family owned and operated business. Restaurateur Vanessa Salopek, and parents Janet and John Salopek opened MARKET in 2013. When Vanessa was younger she spent the summer months on her Grandparents cattle farm. It was during this time she developed a strong passion for fresh ingredients and sustainable living. Her passion for sustainability and love for hospitality inspired her to open MARKET.
In 2017 Vanessa was diagnosed with Celiac disease. It was her goal to make MARKET a safe environment for those with allergies and other dietary restrictions without compromising taste or quality. MARKET is not 100% gluten-free restaurant, however they go to great lengths to reduce the risk of cross contamination including having a designated gluten-free fryer. Vanessa wants to make it easier for those with allergies to enjoy eating out, where their allergies are taken seriously and the food is always delicious!
